Marlene's Beets

Wash beets and rub with olive oil.  Wrap each beet in foil and roast in a preheated 425 º F. oven for 40 to 50 minutes.

Cool, peel and cut into wedges.

Top with crumbled bleu cheese and pistachios.  Drizzle with olive oil and season with salt and pepper.  Top with baby arugula.
