Marilyn's Thanksgiving Recipes

 

Turkey Stock

  • 6 cups water
  • 6 cups canned chicken broth
  • 1 cup dry white wine
  • Neck from turkey (and giblets, if desired)
  • 1 bay leaf
  • 3 large sprigs each parsley, thyme, sage and rosemary.
  • 1 cup coarsely chopped celery, with leaves
  • 1 cup coarsely chopped onion
  • 1 large carrot, coarsely chopped
  • 1 teaspoon black peppercorns

Bring to a boil in a large pot. Simmer, uncovered, for 2 hours. Strain through a fine sieve. Season with salt to taste.
