Lemon-Dill Marinated Sockeye Salmon

 

6 salmon fillets (5 to 6 ounces each)

The marinade:

  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh dill (1 1/2 tablespoons dried dill)
  • 1/2 cup chopped onion
  • 1/2 cup extra-virgin olive oil
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon honey

 

Place the salmon in shallow dish (or zip-top plastic bag). 

Whisk together the marinade and pour over the salmon.

Marinate in the refrigerator for 1 to 3 hours.

Remove and grill or broil.

Serves 6.
