White Asparagus Salad

  • 2 cans white asparagus, chilled
  • Leaf lettuce, washed, dried and chilled
  • 1 cup cherry tomatoes, halved
  • 1 recipe Piquant Salad Dressing
  • Parsley or watercress, for garnish
Drain the asparagus and pat dry with paper towels.  Arrange on top of lettuce leaves and garnish with tomatoes.  Drizzle with dressing just before serving.  Serves 8.

Piquant Salad Dressing  -  Pikante Salat Sosse
  • 1 cup mayonnaise
  • 1/2 cup Aromatic White Wine Stock
  • 2 tablespoons minced chives
  • 2 tablespoons chopped parsley
  • Salt and pepper
  • 1 tablespoon drained and rinsed capers
 Whisk together and chill.
