Aromatic White Wine Stock

  • 1 bottle Riesling white wine
  • 2 cups water
  • 3 peeled carrots, chopped
  • 1 small onion, peeled with 1 whole clove stuck in
  • 3 sprigs fresh thyme
  • 3 peeled shallots
  • 2 peeled garlic cloves
  • 2 stalks celery, including leaves, chopped
  • Pulp of 1 lemon
  • Salt and pepper, to taste
 Put everything except the salt and pepper in a large non-reactive pot.  Bring to a boil and simmer, (to remain a vigorous boil) , uncovered for 30 minutes. (Should be reduced by 1/2). Strain, cool and season with salt and pepper.  Chill until ready to use.
