Hot Pepper Corn Bread

  • 1 cup cornmeal
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup creamed corn
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup shredded cheese
  • 3 jalapeno peppers, seeded and chopped

Mix together all of the dry ingredients; set aside.

Stir together the corn, oil and eggs until well mixed.

Stir in the dry mixture and fold in the cheese and peppers.

Put oil to cover bottom of an iron skillet (or other heavy skillet) .  Heat until hot and pour in the batter.  Place in a preheated 400 º F. oven and bake for 20 to 25 minutes or until done through.
